For a chilly day, chowder is charming...


Around here, it's cold...even the midwesterner in me thinks it's cold down here right now. That might be because I've abandoned parkas and boots and the appropriate items of clothing for cold weather. So soup, and chowder in particular, is nice.

The other night I made a really really easy corn/potato chowder.

This recipe goes together super quickly!!!!

The providers of this recipe would probably hate me, because I didn't bother with evaporated milk. I just made reconstituted dry milk, but added extra milk powder so I figure I approximated evaporated milk. (kind of a burly mix...extra powder. ;-) ) My guess is that soy milk would be okay, but on the thin side, so perhaps adding more potato flakes would be a good idea in that case.

Didn't bother with the Tater Tots, as I don't keep 'em in the house and it seemed like gilding the lily.

If you don't have ham in the house (as I didn't), some bacon bits work well. I used half a bag of real bacon bits instead of all that ham, and it was still really nice. It would be a nice way to use up leftover ham or maybe even some bacon you have in the house.

So darn easy.
