Lightening up southern food


Being a northerner through and through I am not that into southern cooking but am going to try some of these...

We tried this one tonight and the hubs liked it as well as the kiddo...

CRUNCHY BAKED CHICKEN
¼ cup plain yogurt
3 tablespoons chopped fresh parsley
½ teaspoon poultry seasoning
¼ teaspoon Creole seasoning
4 6-ounce skinless, boneless chicken breasts
1 cup corn flakes, crushed
1. Combine yogurt, parsley and seasoning in a small bowl. Brush the chicken with the yogurt mixture and dredge each piece in the cereal. Place the chicken on a rack in a roasting pan.
2. Bake, uncovered at 400 degrees for 45 to 50 minutes or until the chicken is tender.

MISS DAISY'S SQUASH CASSEROLE
1½ pounds yellow squash, sliced
½ cup chopped onion
1 teaspoon reduced-calorie margarine
1 tablespoon all-purpose flour
½ cup skim milk
1/3 cup shredded, reduced-fat mild Cheddar cheese
¼ teaspoon salt
¼ teaspoon ground black pepper
1/3 cup chopped green bell pepper
1/3 cup toasted whole wheat breadcrumbs
1. Preheat oven to 350 degrees. Spray a 1½ quart casserole dish with nonstick cooking spray. In a large pot, cook the squash and onion in a small amount of boiling water until tender, about 10 to 12 minutes. Drain.
2. In a heavy saucepan, melt the margarine over medium heat. Add the flour and cook for 1 minute, stirring constantly. Gradually add the milk, stirring until the mixture is thickened. Remove the pan from heat. Add the cheese, salt and pepper, stirring until the cheese melts. Quickly add the green pepper and squash to the cheese mixture. Spoon the squash mixture into the prepared dish. Top with the breadcrumbs. Bake at 350 degrees for 45 minutes.
